Ingredients (for 4 servings):
1 tb olive oil
1 chopped onion
4 garlic cloves thinly sliced
2 cups cherry tomatoes cut in half
1 tb maple syrup
1 bunch of spinach (hard stems removed) thickly cut
1 1/4 cup quinoa, rinsed and drained
1 vegetable stock diluted in 2 cups of boiling water
Instructions:
1. Warm the oil in a pan, add the onion and the garlic, and cook until they soften a bit.
2. Add the tomatoes and the maple syrup and cook until the tomatoes are soft.
3. Add the spinach and stir for a while.
4. Add the quinoa and stir well.
5. Add the water with the vegetable stock.
6. Stir well, reduce the heat, and put the lid on.
7. When cooked, remove the pan from the heat and leave covered to rest for a while,
before you serve.
